I am a research Intern at Laval University, my project is about the effect of soil structure interaction on the seismic design of Geostructures.
Exactly we want to simulate the effect of monotonic and cyclic loading on the shaft capacity of non-displacement piles in sandy soil.
We want in our simulations to work with more realistic parameters of soil to tackle with the hardening and softening behaviour of the stress-strain relation, but I don’t know exactly what are the parameters that I have to focus on, is there anyone here who is working with similar approaches that can help me to familiarize with using Fortran since I am a beginner at working with UMAT/VUMAT subroutines for Abaqus.

Cyclic loading of piles, fortran programming, umat/vumat usage, is quite an advanced topics for advanced geotechnical university courses, not for forum communication.
What we can do is to recommend what models you could use, but then it will be up to you to study how to identify parameters and properly use the models.
For your purpose, there are basically three models at SoilModels which would be suitable: sand hypoplasticity, SANISAND and PM4SAND.

For identification of parameters, hypoplasticity has an advantage of being implemented in automatic calibration software ExCalibre:
